As it turns out, women‘s dietary needs change quite a bit as they approach and go through menopause. Insulin resistance goes up, higher glycemic carbs turn into fat instead of energy, all sorts of annoying things. So, I’ve been looking for recipes that are tasty, easy to do, and fit more in the New & Improved 50+ Me. This one came from Practical Paleo (not that I’m doing a paleo diet, but some of the recipes help me rethink food options). If you have a go-to recipe for something, add to the thread!

4 eggs
1/2 cup canned pumpkin
1 t vanilla extract
2 T maple syrup
1 t pumpkin pie spice
1 t cinnamon
1/2 t baking soda
2 T melted butter or coconut oil (plus extra for pan frying)
1 mashed banana (optional)
Whisk it all together and treat the batter like regular pancakes. I end up with about 9 pancakes (I don’t add the banana) and eat them in two meals.
